Fishwife's albacore tuna is pole-and-line caught in the Bay of Biscay and off the coast of South Africa by small boat fishermen. Their tins of Albacore Tuna with Soy Ginger are packed by hand with freshly ground ginger, umami-rich gluten-free soy sauce, a pinch of garlic, a splash of rice vinegar, and a touch of mirin by a cannery located in Northwest Spain, the heartland of the conservas tradition.
